Air-fryer Spring Rolls

A healthier way to enjoy spring rolls! Packed full of nutrients and flavour.
Ingredients

1 tbsp olive oil (save some to brush the sping rolls)
- 2 tbsp fresh ginger peeled and chopped
- 1/2 brown onion peeled and diced
- 400 g turkey mince
- 1 tbsp Changing Habits Vegetable Stock Powder
- 1 carrot peeled and grated
- juice of 1 lime
- 3 tbsp tamari or coconut aminos
- 1 handful baby spinach chopped
- 3 tbsp coriander leaves chopped
- 1 tbsp chilli chopped finely
- 1 cup water
- 8-10 Rice paper sheets
- 2 tbsp sesame seeds
Dipping Sauce

1/8 cup tamari or coconut aminos

1/8 cup honey
Garnish

1 shallot cut
Directions
- Heat a frypan over a medium high heat.
Add the olive oil, onion and garlic and cook until soft and fragrant.
Add the turkey mince, Vegetable stock, carrot, lime juice, tamari or coconut aminos, spinach, coriander and chilli, Stir continuously until the turkey has cooked through.
Add the water and turn down to medium to simmer for approximately 15 minutes or until the water has evaporated. Stir occaisionally.
Set aside to cool completely.
Preheat the air-fryer to 200 degrees Celsius.
One by one, submerge a rice paper sheet in warm water until soft. Transfer onto a clean tea towel, spoon some of the mixture along the base of the sheet and wrap tightly into a roll. Repeat with the rest of the mixture.
Brush each roll with a little olive oil and sprinkle with sesame seeds.
Transfer the rolls into the air-fryer and cook for 15 minutes until they are nice and crispy on the outside.
Combine tamari or coconut aminos in a small bowl and mix well.
Transfer Spring rolls onto a tray and serve with the dipping sauce. Sprinkle with shallots.
