Apple Pikelets with a Strawberry Compote

These delicious pikelets make a great breakfast or snack option. They will no doubt become a family favourite!
Ingredients
Strawberry Compote
- 1/2 cup frozen or fresh sliced strawberries
- juice of 1 lemon

1 tsp Changing Habits Rapadura Sugar
- 1/4 cup water
Pikelets
-
2/3 cups milk (we used coconut milk)
- 1 egg
- 2 tsp butter melted (save half for frying)

2 tbsp Changing Habits Rapadura Sugar
- 1 apple peeled and chopped into very small pieces (approximately 3mm x 3mm)

1 cup Changing Habits Emmer Wheat Flour
- 1 and 1/2 tsp baking powder
Optional additions
-
Coconut yoghurt or fresh cream

sprinkle of Changing Habits Cinnamon
Directions
Strawberry compote
- Place all ingredients in a pot over a high temperature and bring to a boil.
Turn down to simmer for approximately 10 minutes, stirring occasionally until the mixture has thickened.
Remove from heat and set aside.
Pikelets
- Combine milk, eggs, butter and sugar in a bowl and mix well.
Add the rest of the pikelet ingredients (but save a little of the butter for the frypan) and mix well.
Heat a pan over a medium heat.
Spoon some butter into the frypan.
Spoon a little of the mixture onto the frypan and fry for approximately 30 seconds on each side. Set aside and repeat with the rest of the mixture.
Serve the pikelets with the strawberry compote and yoghurt or cream.
