Banana and Date Puddings with a Caramel Sauce

A healthier alternative to the average sticky date pudding! A perfect, decadent treat for the colder months of the year. Best served warm, but also delicious cold.
Ingredients
- 3 over ripe bananas mashed

2 tbsp Changing Habits Rapadura Sugar
- 2 eggs
- 1/4 cup coconut oil melted

2/3 cup Changing Habits Dates chopped finely
- 1 tsp vanilla

1 cup Changing Habits Emmer Wheat Flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder

1 tsp Changing Habits Cinnamon
Caramel sauce
-
1 tbsp butter or ghee
-
1/4 cup Changing Habits Rapadura Sugar
- 300 ml cream
- 1 tsp vanilla essence

pinch Changing Habits Seaweed Salt
Directions
- Preheat oven to 180 degrees Celsius and line muffin trays with baking paper (it should make 8).
In a bowl, mash the banana and stir through the rapadura sugar, eggs, coconut oil, dates and vanilla. Mix well.
Sift in the flour, baking soda, baking powder and cinnamon. Mix well.
Spoon the mixture into the muffin tray and bake for approximately 15-20 minutes, leaving them a little soft on the inside.
Caramel sauce
- While the puddings are in the oven, start on the sauce.
Add all sauce ingredients in a pot and cook over a high heat, whisking continuously until the sauce thickens.
Remove from heat and pour straight over the puddings as they come out of the oven.
