Cheeky Chicken Meatballs

Ingredients

2 Spring Onions
- 2 Knobs of ginger (roughly the size of your thumb)
- 1 Red Chilli (to your preferred level of heat)
- 3 Cloves of garlic
- 1 cup Corriander
- 2 tbsp Fresh squeezed lime juice
- 500 g Organic Chicken Breast
- 1 dash Changing Habits seaweed Salt
- 1 dash Changing Habits black pepper
Directions
- Combine all ingredients into Thermomix or food processor. (Dice chicken for ease of mixing)
- Blend until all ingredients are well mixed and consistency is relatively smooth
- Spoon mixture into the palm of your hand and roll until desired meatball shape
- Place on tray lined with baking paper
- Place in oven at 180 degree heat for approximately 35 minutes, the edges of the meatballs will start to brown up
- Serve with cauliflower rice and home made pesto
- Enjoy!
