A wonderfully warming, nourishing and healing soup. Packed full of amazing nutrients to help boost the immune system just in time for winter!
Ingredients
Soup

1 tbsp olive oil
- 1 onion diced
- 3 stalks of lemongrass (outer layers removed) diced
- 2 cloves garlic, minced
- 4 tbsp ginger grated
- 750 g chicken thighs
- 2 tomatoes diced
- 4 cups water

1 tbsp Changing Habits Turmeric

1 tbsp Changing Habits Curry Powder

1 tbsp Changing Habits Chicken Broth

1 tbsp Changing Habits Vegetable Stock Powder
- juice of 1 lime

Changing Habits Seaweed Salt to taste
-
cracked Changing Habits Pepper to taste
- 2 stalks celery diced
- 2 carrots peeled and diced
- 2 kaffir lime leaves
To Serve
-
2 zucchinis spiralized (or vermicelli noodles work well with this recipe)
- lge handful fresh coriander leaves
- 2 tbsp dried chili flakes
- extra salt and pepper if needed
Directions
- Over a medium heat, add the olive oil into a frypan.
Add the onion, lemongrass, garlic and ginger and cook until soft and fragrant.
Add the chicken thighs and cook for about 2 minutes on each side.
Transfer into the slow cooker with the rest of the ingredients and mix well.
Cook on low for 8 hours.
To serve
- Serve straight out of the slow cooker into bowls on top of the zoodles or vermicelli noodles.
Top with coriander and chilli flakes.
