Don't ever waste your juice pulp! It is way too precious. It still contains all those beautiful nutrients and fiber that is still valuable and can be of good use. Here is a quick easy recipe that can be enjoyed for breakfast, a snack, dinner and so on!
Ingredients
-
1 cup of vegetable pulp (eg kale, carrot, beetroot, parsley, ginger) leftover from juicing
- 1 clove of garlic, crushed
- 1/4 brown onion, chopped finely
- 1 egg white
- 1 tsp tapioca flour
-
1/4 tsp Changing Habits Turmeric
-
Pinch of Changing Habits Cumin Powder, Changing Habits Seaweed Salt and freshly cracked Changing Habits Pepper
- A sprinkle of cayenne pepper
- Any fresh or dried herbs you like, add them in! For example, coriander, basil, thyme, parsley.
- 2 tbsp coconut oil
Directions
- Put all the ingredients (excluding the coconut oil or ghee) into a bowl and mix together with a spoon or your hands.
Heat up a stainless steel pan, add in coconut oil or ghee.
Use your hands to make patties and then place on the pan to cook.
They will go slightly brown and it will be easy to flip when they are cooked on one side.
Serve with a salad, eggs, or as a side or snack. Feta and haloumi go beautifully with these.
