"Kid Friendly" Coconut Pancakes

Nut free pancakes that are super quick and easy to create. The kids will love them decorated with fruit to make patterns or funny faces out of.
Ingredients
GF, DF, GrF, NF, GAPS

1/4 cup Coconut flour, sifted

A pinch of Changing Habits Seaweed Salt
- 1/4 cup Organic coconut milk
- 1/8 tsp baking soda

2 tbsp Changing Habits Coconut Oil
- 3 organic eggs
- Organic honey to taste

1 tsp Homemade Vanilla Essance
- Butter or coconut oil for cooking
- Optional Add Ins: Lemon or orange juice and zest, banana, Changing Habits Cacao Melts, berries, shredded coconut, Changing Habits Ceylon Cinnamon etc.
Directions
- Mix together eggs, vanilla, coconut oil and honey.
Place a large frying pan on medium heat to warm the pan up.
Add all other ingredients together and mix until just combined. Be careful not to overmix this batter otherwise the pancakes will not turn out fluffy, they will just cook quite flat.
Add butter or coconut oil to the pan and swirl it around to cover the whole pan.
Add 2-3 spoons of the mixture onto the pan for each pancake, being careful not to overcrowd the frying pan. Note you will not see that many bubbles from the mixture as it cooks so flip them over carefully when they are golden on the bottom and cook the other side until desired.
Continue cooking the pancakes in batches until the batter has been used up.
Serve the pancakes straight away, decorate them with fruit and yoghurt for the kids to enjoy!
