Slow cooked chicken laksa

A delicious slow cooked chicken laksa, packed full of herbs, spices and goodness! Serve with rice, noodles or even mashed potato.
Ingredients
Laksa Paste

1 brown onion peeled and roughly chopped
- 2 cloves garlic
- 3 kaffir lime leaves
- 2 sticks lemon grass
- 1 tbsp chicken broth

2 tbsp fresh ginger peeled and roughly chopped or Changing Habits Ginger Powder

2 tsp Changing Habits Turmeric
- 1/2 red chilli
- 1 tsp olive oil
- juice of 2 limes
- 1 tbsp shrimp paste

cracked Changing Habits to taste

Changing Habits Seaweed Salt to taste
Laksa
-
750g chicken thighs
- 400 ml coconut milk
- 2 carrots diced
- 1/2 sweet potato peeled and diced
To serve
-
handful coriander leaves
- 1/2 fresh chilli diced
- sml handful bean sprouts
- lime wedges
- rice, vermicelli noodles or mashed potato
Directions
Laksa paste
Place all laksa paste ingredients in a food processor and blitz until smooth.
Laksa
- Heat a large frypan over a medium heat. Transfer the laksa paste into the pan and cook for a while until fragrant.
Add the chicken thighs and cook for approximately 30 seconds on each side.
Transfer the laksa paste and chicken thighs into the slow cooker along with the coconut milk, carrots and sweet potato. Mix well.
Cook on low for 8 hours or high for 4 hours.
Serve with rice, noodles or mashed potato and top with coriander, chilli, bean sprouts and lime wedges.
