These Spinach and cheese scrolls make the perfect snack! Easy to make and ready to eat in 30 minutes, straight out of the oven. Can also be eaten cold - great for lunch boxes!
Ingredients

1 cup plain greek yoghurt

1 & 1/2 cups Changing Habits Emmer Wheat Flour
- 1 tsp baking soda
- 3/4 cup finely chopped baby spinach leaves (or thawed frozen chopped spinach)
- 1/4 cup onion finely diced
- 1/4 cup feta cut into cubes
- Changing Habits Seaweed Salt to taste
- cracked Changing Habits Pepper to taste
- 1 cup grated cheese
Directions
- Preheat oven to 180 degrees Celsius.
In a bowl, combine the flour, baking soda and greek yoghurt. Mix well.
Sprinkle a little of the flour onto a flat surface and knead the mixture.
Using a rolling pin, roll the mixture into a long rectangle shape (approximately 12cm x 30cm).
Top with the onion, spinach and feta. Leaving a slight gap at each end. Season with salt and pepper and sprinkle with cheese.
Roll the mixture up from the narrow end.
Cut into 6 pieces and place flat on a lined baking tray.
Bake for 15-20 minutes until the dough starts to become golden and the cheese is nicely melted.
