Turkey meatballs with a Coconut Herb Sauce

Ingredients
Turkey Meatballs

500 g turkey mince
- 1/2 brown onion peeled and diced
- 1 clove garlic minced
- 3 tbsp thyme and/or sage chopped finely
- 1 egg
- 1/2 tbsp Changing Habits Vegetable Stock Powder
- 1/3 cup blanched almond meal
- 2 tbsp coconut aminos or tamari
- cracked Changing Habits Pepper to taste
Coconut Sauce
-
1 tsp butter
- 1/2 brown onion diced
- 1 clove garlic minced
- 400 ml coconut cream
- 1/2 cup finely chopped spinach
- 2 tbsp sage and/or thyme chopped finely
- 2 tbsp Changing Habits Vegetable Stock Powder
- 1 tsp Changing Habits Ginger Powder
- cracked Changing Habits Pepper to taste
Optional extras

1 broccoli cut into florets and steamed or oven baked

2 cups cooked rice, quinoa or mashed potato
Directions
- Preheat air-fryer to 200 degrees.
Combine all turkey meatball ingredients in a bowl and mix well.
Roll mixture into individual balls.
Place the meatballs in the air-fryer and cook for 12 minutes or until cooked through.
**If using an oven - preheat to 180 degrees. Fry beforehand on a medium-high heat until they begin to brown on each side. Remove and place on a lined oven tray. Bake for 15 minutes.
Sauce
- Heat a fry-pan over a medium heat.
Add the butter, onion and garlic and cook until soft and fragrant.
Add the rest of the sauce ingredients and bring to a gentle boil, stir a couple of times and then reduce to medium-low and simmer for 5 minutes, stirring occasionally.
Remove the meatballs from the air-fyrer and drizzle the coconut sauce. Serve with your choice of rice, quinoa or mash and broccoli.
